Carlos López cuenta algunos secretos y da consejos para lograr la mejor comida para disfrutar con familia y amigos
Carlos "Paty" López tiene una parrilla hace 39 años y en el 2010 se decidió a fundar la Escuela Argentina de Parrilleros, de la que hoy es director. Desde su experiencia, asegura que para hacer un buen asado es necesario tener en cuenta los puntos, la temperatura y los tipos de corte de carne que se van a utilizar.
Pero, lo primero para lograr un buen asado, es prender el fuego en la parrilla. Aunque reconoció que “hay mil formas” y aclaró que no se opone a ninguna (cajón, volcán, maderitas, botella con papel), López recomendó una técnica “que no falla” y con la que “en 30 minutos tenés un fuego espectacular”.
“Es con pan duro, o cartón prensado) y alcohol fino. No algodón ni trapos, porque eso larga olor y contamina. El pan hace de mecha, por lo que se empapa bien, se pone donde se va a encender y se rodea con carbón. Recién después se puede agregar leña. Se enciende el pan, en 10 minutos está enardecido y ahí se agrega más carbón o leña. En media hora tenés un fuego espectacular. Es la forma más sencilla, fácil, no falla y es eficaz”, sostuvo en diálogo con “Rescatados y no tanto” por Radio ArinfoPlay.
Respecto a cuándo poner la carte, dijo que “no hay una ciencia exacta para saber el punto justo de la temperatura”, pero recalcó que “los indicativos están en el cuerpo: se aceita en el cuerpo, en las manos, en el oído, en la vista”.
Al ser consultado sobre los tipos de parrillas, habló de las desventajas de cada una: “En las de fierro redondo la grasa cae en la brasa y vuelve en partículas quemadas, grasas saturadas o partículas cancerígenas que se pegan en el corte nuevamente. En las de fierro en F, hay que limpiar constantemente, hay que pasar un cepillo con agua porque si no la grasa saturada se pega en los cortes y pasa lo mismo”.
El experimentado parrillero reveló el secreto para hacer una buena provoleta: “Es difícil de hacer. Tiene que tener un estacionamiento, cortarla, sacarla del packaging cuatro o cinco días antes, dejarla secar e irla dando vuelta cada día. Al cocinarla, hay que ponerla directo a la parrilla y dorarla, que agarre el sabor de la parrilla. Recién después se puede poner en un plato”.
“Al chinchulín hay que hervirlo sí o sí para tiernizarlo y para desgrasarlo en un 50%. Cuando se cocina, pierde más de 60% de su valor por la cantidad de agua y grasa que pierde. Si ponés un kilo, comés 300 o 400 gramos”, contó.
En tanto, en relación a los cortes de carne como colita de cuadril o bife de chorizo entero, planteó: “Si se pone del lado de la grasa, estas se saturan. Hay que ponerlo del lado de la carne”.
“La sal hay que ponerla en la parrilla, de un lado y del otro. Para cortes finos, usar sal fina. Para cortes gruesos, gruesa. Nunca poner en la mesa la sal porque la sal cocinada es más saludable que la cruda”, agregó López desde los micrófonos de Radio ArinfoPlay.
Y, finalmente, el parrillero o discriminó a la hora de elegir una bebida para acompañar un buen asado: “Vino, cerveza, gaseosa o agua”.
